Lighten Up Your Life

Starting on January 1st 2010, a group of us women at work are joining up with Mission Hospital's Lighten Up Your Life program. It's sorta like a biggest loser type challenge, without the weighing in in front of 17090560403023 people!! (Thank the good Lord!!)

So I've been reading some Running blogs, and weightloss blogs to get myself mentally prepared. I refuse to be the dead weight on our team, I refuse to buy larger clothes anymore & I'm tired of being unhealthy!!! I was running/walking quite a bit this summer and actually managed to lose quite a bit of weight...then school started & I quit. Just one day didnt go & never looked back. It's sad. I feel miserable, look miserable and just overall miss it!

Wow, its been awhile.

I havent really had alot to post about, or at least anything worthwhile.

We had a wonderful Thanksgiving and Josh & I celebrated our 6th anniversary yesterday!

My classes are coming to a close,last assignment is due today! Yay for no more till January! A much needed break. My next semester is loaded pretty heavily and i'm really dreading it, but I'm ready to be done!


Bryson is in the church Christmas program tonight and then one at school on the 17th. I will try to get some pictures up soon :)

It's been crazy lately!

I havent had time to breathe much less post. We had our Fall Festival at school Saturday & so we've been working hard on that lately. We all had a blast & the kids loved loved loved it! I'm so glad its over though! Cookie Dough will be delivered Wednesday, so I will be unloading 3,000 tubs that day. Luckily I love all the girls we have helping, so we will find away to make it fun, I'm sure!

I've been really swamped with homework lately & I'm trying to pull up my GPA a bit, from my last math class...ugh! So that's been keeping me busy busy!

I'll try to post something worthwhile soon..I've not been really upbeat and just dont have too much to say lately.

With eyes wide open..

These verses give me comfort, He is watching down on us all. Not watching us, waiting on us to mess up..but watching over us, as a new mother would watch over her sleeping newborn. Not that He overlooks sin but He sees us through His amazing love, grace and mercy. I hope that visual of Him watching over you, knowing you intimately, and considering everything you do is a comforting reminder to you today. It was to me!

This past week has been crazy, I swear! (If I was a swearing kind of gal, but I'm not.)

Monday, I found out I had gotten a job. Yipee! I start Monday, and I'm very excited. It's nice to see all these classes, that I'm killing myself with, are paying off. I also took a nice long look at what I left left, and wow, its flying by. I'm thrilled with that too! Then it will be on to figure out where I'm going to get my bachelors at. Decisions, Decisions!

On the PTO front, cookie dough has been sent off! Whew, its out of my hands for a few weeks. I'm sure that sorting and delivering will be fun as well. We had a great success though.

Labor Day Weekend

How sad that summer is officially over :( But we had a great weekend! The hubby spend most of his getting ready for Hunting, which started yesterday!

Friday night we went to Texas Roadhouse, our usual restaurant with a family friend and did a bit of shopping. Had to run to Dick's Sporting Goods for some last minute hunting gear. (All I can say is that Josh cant ever complain about how much I spend on purses and shoes...hunting stuff is MUCHO expensive!)

Saturday I spent some time with my momma and hit a few yard sales and had chinese!

Sunday was the best! Some of the girlies in my Having a Mary Heart in a Martha World went to Applachian State for the Praise Festival. Performing were Josh Wilson, 7 Miles, Meredith Andrews & BRANDON HEATH! They all rocked and the speaker was the preacher at Cornerstone in Boone and he had a very powerful message. Many gave their life to Christ and it was a very moving evening. After the concert, our group headed over to Macado's and met up with 7 Miles, who are awesome! They took pictures and hung out with us. Benton Blount is such a good guy. He didnt act he minded us crazy 15 women who all wanted pictures with him :)




The fellowship and friendship our group shared was amazing. We were full of giggles and laughter on the ride to Boone and back. We had such a great time.

Monday, the sister and I shared some quality time and hit the mall and one of our favorite little meals..Firehouse Subs..which just have the most amazing subs ever!

Pink..is my favorite color..

My hubby was lauging at me the other day because I seem to want everything in the color pink. Maybe its living in a house full of boys, or maybe I just really enjoy the color pink. Who knows? So after noticing in one of his hunting magazines that you could now purchase pink bows and pink arrows and womens figure flattering camo. (HAHA! I feel as if I should be saing GIT-ER-Done or something equally as redneck here!) I decided to google pink things and show you some of my favorite finds!

And there my friends is the pink bow..which by the way, I wouldnt be getting if i wanted it. It's double the price of my hubby's bow..which would buy alot of shoes, sigh.

Friendships..

I have been thinking alot about Friendships and how God chooses who we need as friends in our lives. We, as Christians are to love one another, but I personally dont feel we are all meant to be friends. Some people we just dont mesh well with, and sometimes our "energy" is just not the same.

I also think that our friends help "form" and "create" our personalities. I have always heard that he who walks with wise people will become wise himself and he who keeps company with foold whill himself be destroyed. The Bible tells us that we arent to be unequally yokes with unbelievers, that we are to withdraw from every brother who walks disordely.

This doesnt mean that we cannot work with the lost, and the ones that need to find God.

I think when you give your life to Christ, you surrender your life to his plans. He has a plan of what job you should have, whom you chose as your spouse, your friends,etc. I think God decides who yout TRUe friends will be and who will not.He might take people out of your life so you do not have negative influences. They may not be open to growing and maturing with him and could hold you back. YOu dont need anyone in your life stunting your growth in the Lord. It's alot like parents who dont want their child hanging out with certain people, so they wont have that influences. He IS the GREATEST dad we could ever have.

When he prunes out the the people you dont need in your lives, he replaces them. These people are your GOD-friends. They will be Godly spirited friends who are walking with him and living a Christian lifestyle.Together you can teach each other and help encourage each other.

Here are some verses I found extremely helpful with understanding GOd-Friends..

The righteous should CHOOSE HIS FRIENDS CAREFULLY, for the way of the wicked leads them astray. (Proverbs 12:26)

As iron sharpens iron, so a man sharpens the countenance of his friend. (Proverbs 27:17)
This one really struck home with me. As one of my GOD-friends really has sharpened me. She is always honest and straight forward with me.She always has wonderful advice and lifts me up in prayer when needed. She has sharpened me and my christian walk so many times. I am so thankful for her. She keeps me on the straight and narrow path, even when we take a wrong way street.. together we laugh at our mistake and fix it! :P


When Jesus sent out the 12 apostles, he sent them two-by-two. I feel that he did this as we are all supposed to have a friend by our side. If you currently dont have a GOD-friend, please pray to him that he will bring you one.

Faith like...me?

I have been struggling this summer with some very personal struggles. Most include some people in my life I'm having to deal with. It's a tough and messy situation that has gone from bad to worse very quickly. I have been struggling with how to handle it in a christian manner but also not being a "doormat for the devil". I have tried the whole keep my distance and keep my mouth shut, but for some strange reason that fueled the fire even harder.

A good friend of mine told me I was thinking about the situation too much & letting it get the best of me. I realized that I was spending every moment of my day thinking and worrying about this. (And yes, I realize writing this is making me think of it). I realized I was letting this situation come between me and my husband, me and my whole life....but most importantly me & GOD. I have given him my problems and I refuse to think another thought about it.


So that your faith might not rest in the wisdom of men (human philosophy), but in the power of God. 1 Corinthians 2: 5

Forget the Diet..Baked Potato Casserole

Yummy!!! This can be made ahead, so its a favorite for working people! (My family omits the green onion!)

•5 pounds Red Potatoes, Cut Into 1 Inch Pieces
•1 pound Bacon, Cooked & Crumbled
•4 cups Shredded Cheddar Cheese
•1 cup Green Onions, Sliced
•1 cup Mayonnaise
•1 cup Sour Cream
•1 teaspoon Salt
•½ teaspoons Black Pepper

Preparation Instructions
Peel, cube and cook potatoes until just tender. Drain and place in a large bowl to cool slightly if making the casserole right away. If you are going to make this to reheat later, let the potaotes cool thoroughly. Combine the remaining ingredients and mix into the potatoes. Transfer to a 4-1/2 quart baking dish. Bake, uncovered for 50 to 60 minutes at 325°F or until browned and heated through. Add 15 minutes to the cooking time if the casserole has been refrigerated.

Isnt it amazing??

Isnt it amazing to think back to a year ago. Where were you? What were you doing? Were you happy? Sad? Ready to give up? Who were your friends?

I sat in bed, unable to sleep last night..thinking of these things.

I am truly blessed. I thought of all the changes that have taken place in me in the last year.

**I had no clue what I wanted to do with my life, now I have 3 semesters of school behind me! And on the track to be a teacher.

** This time last summer I was lonely, I have very few friends I could call *friends*. Now I have met so many true friends. They are all such blessings to me and I am thankful for each of them.

**We found a great little house that we love. We were in a terrible rental situation and now we have somewhere that feels like home.

**We were without a church home. We found a wonderful match for us and love the people that go there, the music, the messages..all of it! It has inspired me to really grow in my Christian walk.

I am thankful for a wonderful loving husband, two awesome little boys who are quickly growing to be young men and for an amazing God who is more than I could ever deserve.

Women..Mothers and Wives..

"For this cause a man shall leave his father and mother, and shall cleave to his wife; and they shall become one flesh." Genesis 2:24


My husband is the baby of two sons in a family. I am the woman who "took" him away from his mother. It has been a rough transition.I believe this is one the hardest transitions in life. It is so important to realize that God has ordained that this transition take place, as the verse above states. It is one of the pillars that makes a house a home and a family secure, but it is difficult.

Women have such a power of influence. It is a strength that God has given us and we can use it for good or for evil. When there is a mother and a wife in a man's life, the wife is to be the dominant influence. As a wife, I know this has been important to my marriage. But as a mother, I cringe at the thought of letting go of my sons one day. Thank goodness, at the ages of 6 and almost5 I still have a while!

I hope that when my children are ready to leave the nest and find the woman they will spend the rest of my life with, that I will look for the good in them and be an encouragement to them. I relize that when a man leaves his parents that he and his wife are now one and they will have a family. And that will be his top priority, after God. It doesnt matter if they come to every family dinner, every family function, or even call me every day..he is with his family. I hope that I cant put my needy-ness to have control over his life aside..and realize he has done a good job. He has a wife who loves him dearly, he is raising a beautiful family and provides for them wonderfully. But most importantly I will know that we serve the same God and he is the best father, provider and friend we could ever have.

And that I know will give me the peace I need..to let go.

Coconut-Lime Bars


•1 cup Butter
•1-¾ cup Flour
•⅔ cups Powdered Sugar
•¼ cups Shredded Coconut
•¼ cups Chopped Pecans
•1-½ cup Sugar
•¼ cups Flour
•1 teaspoon Baking Powder
•4 whole Eggs, Slightly Beaten
•½ cups Lime Juice
•2 tablespoons Extra Coconut For Garnish On Top
Preparation Instructions
Preheat oven to 350 degrees
Grease and flour a 9 X 13 pan

To make crust:
In a medium bowl, whisk together flour and confectioner’s sugar. Cut in butter until combined and crumbly. Add in pecans and coconut. Press mixture into bottom of pan. Bake for 20 minutes or until golden.

To make topping:
While crust is baking, prepare topping.. In a larger bowl, add sugar, flour, and baking powder. Then add slightly beaten eggs and lime juice. Mix well and pour on top of warm baked crust. Bake for 20-25 minutes. When cool, dust with confectioner’s sugar and refrigerate.

Optional: Put 2 Tablespoons coconut on baking sheet and toast for 5-10 minutes or until lightly browned. Sprinkle over top.

Cut into bars and chill! Best served cold!

Summertime...where the living is easy..

Boy, am I sad to see August quickly approaching. The boys & I have had such a wonderful summer so far. We havent gone on any fancy-schmancy vacations..we've just stayed around home. We go to the pool about every other day, we've been to the lake a few times and just enjoyed our time together. It's so nice. I dread the day when its not "cool" to hang out at home anymore..I love the age they are. Okay, so I better quit talking about this before I tear up..oh well..too late!


We went bowling with the kids from church this morning. It is so nice to go to a church that wants the kids and youth to blossom. So many churches here in the "bible belt" have an old school way & dont have many programs for the children. The boys love love love our church & It makes me so happy.

I've been looking around at some new recipe sites! Like this one founded by none other than The PIONEER WOMAN!!! She has the most yummy looking meals! (Yes, I love pictures of yummy meals!!) you should check her out for sure! You wont be sorry!


I probably wont be around much the next week, as I have a lovely class I must take. Should be fun!

I'm up to my eyeballs in World Civilizations homework & I cant get into it. I just hate it and my eyes start to glaze over as soon as I open the book! It's awful!

It's raining here :( Boo! Of all days to ban from Facebook! LOL




I'm hoping the rain subsides this evening so I can go walking with Mrs.Farmer (See her blog in the blog roll!) I have been so lazy about eating healthy and exercising this summer & It's really starting to show. I've let my subscriptions to Fitness & Shape magazines go, I bet the Wii fit doesn't even remember me & I couldn't tell you the last time I weighed myself!! Ouch!

The YMCA is so far down the road & I know I would use that as an excuse not to go..but somethings gotta give!

Guess who's back...back again...Steph is back!

Sorry its been a while!

We have moved into a new house, so I've been MIA for a bit.It has taken me a while to get everything the way I want it. I still havent gotten the boys room quite finished, but I cant find the bedspreads I want. I want a certain color plaid. Oh well, one day I will find the perfect one!

J has been working awful hours lately. Though I'm very thankful for all the overtime he is getting..especially with me not working but I miss him! Hopefully after the 4th things will slow back down.


Today, I made two trips to the Greenhouse and got a ton of flowers & re did the terrible flower bed in front of the house. I will try to take pictures when they start blooming and we get a load of mulch.

I'm starting a new bible study at church Sunday evening & I'm very excited about that. I need to come out of my shell, and our church is so huge I've been a bit shy..but its time!

Kids & Energy Drinks..SCARY!!!

**This is a true story. I know the mom of Quinn. This is very scary & I will NEVER let my children have an energy drink!!** This is not the little energy shots, but just like monsters, NOS or red bulls. TOO SCARY!



We were at my sister's house yesterday and the kids (Quinn, my 10 yr old nephew and two other 10 yr olds) wanted to the store before going to their fort. They normally buy drinks to take with them and the other kids were going so we gave our two some money and sent them on their way.

Are you familiar with energy drinks? I am not. Quinn bought a slush puppie drink and the other 3 boys bought an energy drink called Nos. They were en route to their fort and drinking their drinks. The one kid, Sean, apparently chugged 3/4 of this HUGE can of this energy drink. Almost immediately afterwards, he started freaking out saying that he couldn't breathe and my nephew looked for an adult to help him. Just as this man reached him, Sean collapsed. He went into cardiac arrest and the man performed CPR until the paramedics arrived. They were able to get his heart going again and transported him to the hospital and I guess he's going to be fine but OMG...

His parents said the doctors are blaming solely the energy drink, that there was nothing else wrong with his heart that could have caused it. I guess it says right on the can that it's not for children but how scary that they can just walk in and buy it like that. I mean, this kid had a heart attack!! The doctors told S's parents that they are seeing this more and more often and not only in young kids but teenagers as well. They say they are popular drinks these days. I dunno...

Anyway, Sean will be fine. The other 3 boys were very very scared and totally freaked out.

Nothing to Say

Wow, those who know me in real life know that isn't possible.

Things on my mind:
1. Why people insist on smoking at the ball fields? Sitting in the bleachers puffing right away? Who cares about the newborn behind you or the family in front? Gee...

2. This economy! It stinks!It stinks!It stinks! Sick of the budget cuts going on in education & now not only worrying about my future career but even what kind of teachers are going to be left for my kids. Wonderful educators are losing their jobs. Its sad and it hits everywhere. Hubby's work is mandating pay cuts now. SIGH..

3. Is it summer yet? I can remember back when Memorial Day officially kicked off summer, yet its been here and gone & now we still have two weeks of school.

Prayer Requests:

My cousin just went through her first round of radiation to fight fight breast cancer. She is very young & has a MIRACLE baby who isn't even a year old! She has been through alot losing a beautiful baby boy two years ago & wasn't sure if her daughter was going to make it. She was born months early & survived weeks and weeks of NI CU and still has trouble with reflux and sleeping.

Teachers..everyone is in such an upset because we don't know who is coming back or not. Its awful not knowing. Just pray for them peace and calmness and to enjoy the summer & let God handle it. Its out of all of our control and he has a plan! And what a wonderful plan he has!

Power of a Praying Parent

This was sent to me today & I really was blessed by it and wanted to share with all you parents.



Lord, May the beauty of Your Spirit be so evident in me that I will be a godly role model for my child. Give me the communication, teaching, and nurturing skills that I must have.

Grow me into being the kind of parent You want me to be and teach me how to pray and truly intercede for his/her/their life. You said in Your Word, "Whatever things you ask in prayer, believing, you will receive" (Matthew 21:22)

In Jesus' name I ask that You will increase my faith to believe for all the things You have put on my heart to pray for concerning this child.

Various Stuff

First, We are looking for a good couples devotion book. Not the Love Dare, but something we can do together. Any ideas?? I know AGH & her hubby were doing one, but I'm not sure of the name of it. Would love your input.


Second, Can you believe that its just a few weeks till school is out? Awesome! What are your kids doing during the summer? I need some ideas. I'm sure we will join the ruritan pool and we are planning a beach trip but I need some ideas!


We went to Rutherfordton again Saturday night. We seem to be going down quite a bit lately. I love it and the kids love it. We enjoy visiting with my grandmother and my aunt and uncle alot. They are so funny!

I never did post my Mother's Day recap so here goes! Basically, on the way to church we stopped at a gas station and my van preceeded to catch on fire. Not really sure what happened but it overheated days before and they think it got so hot it melted some coating off the wires.Byt anyways, so the van was totalled and it was quite an exciting day. Old fort FD came and saved the day by putting the fire out but it was already quite toasted.
I wound up finding a Grand cherokee and so far I love it! But I do miss my van, (though the hubby doesnt at all!!)

My Menu Plan

Sunday: Grilling Hamburgers, Squash & Zuccini, Baked Potatoes, corn on the cob

Monday: Spaghetti with Salad and garlic bread

Tuesday: Grilled chicken, roasted potatoes and steamed cabbage

Wednesday: BeefStew in the crockpot with potatoes and carrots, cornbread muffins and macaroni for the kids.

Thursday: Chicken Pot Pie, veggies (not sure what all yet).

Friday: Meatloaf, Mashed potatoes, Green Beans, Rolls


Overall I did okay at the store. I really wanted a pork loin but they only had huge sizes left and I didnt want to pay 13 dollars for one. Maybe next time.

Challenge..

My challenge for the week is to cook!!! We had so much going on this past week, its been nuts and I rarely cooked dinner.

So here it is. I'm working on using what is in the freezer and the cabinets and creating 5 meals and lunches/leftovers and only purchasing $30.00 worth of items at the grocery store.


I will be going to the grocery store after our 1:30 ballgame & will update on my challenge!


I hope this works out and keeps me organized & even helps me not spend so much at the grocery store. We do have some meats in the freezer and I have seen others do it on their blogs.

Leave it on the desk!

While I realize this is a very long passage, please read it. It's very touching & really hits home.


DON'T LEAVE IT ON THE DESK

There was a certain Professor of Religion named Dr.. Christianson, a
studious man who taught at a small college in the western United States .

Dr. Christianson taught the required survey course in Christianity at
thisparticular institution. Every student was required to take this course
his freshman year, regardless of his or her major.

Although Dr. Christianson tried hard to communicate the essence of the
gospel in his class, he found that most of his students looked upon the
course as nothing but required drudgery.

Despite his best efforts, most students refused to take Christianity
seriously.

This year, Dr. Christianson had a special student named Steve. Steve was
only a freshman, but was studying with the intent of going on to seminary
for the ministry. Steve was popular, he was well liked, and he was an
imposing physical specimen. He was now the starting center on the school
football team, and was the best student in the professor's class.

One day, Dr. Christianson asked Steve to stay after class so he could talk
with him. "How many push-ups can you do?"

Steve said, "I do about 200 every night." "200?

That's pretty good, Steve, " Dr. Christianson said.

"Do you think you could do 300?"

Steve replied, "I don't know.... I've never done 300 at a time."

"Do you think you could?" again asked Dr. Christianson.

"Well, I can try," said Steve.

"Can you do 300 in sets of 10? I have a class project in mind and I need you
to do about 300 push-ups in sets of ten for this to work. Can you do it? I
need you to tell me you can do it," said the professor.

Steve said, "Well... I think I can...yeah, I can do it."

Dr. Christianson said, "Good! I need you to do this on Friday. Let me
explain what I have in mind."

Friday came and Steve got to class early and sat in the front of the room.

When class started, the professor pulled out a big box of donuts. No, these
weren't the normal kinds of donuts, they were the extra fancy BIG kind, with
cream centers and frosting swirls. Everyone was pretty excited it was
Friday, the last class of the day, and they were going to get an early start
on the weekend with a party in Dr. Christianson's class.

Dr. Christianson went to the first girl in the first row and asked,
"Cynthia, do you want to have one of these donuts?"

Cynthia said, "Yes."

Dr. Christianson then turned to Steve and asked, "Steve, would you do ten
push-ups so that Cynthia can have a donut?"

"Sure!" Steve jumped down from his desk to do a quick ten. Then Steve again
sat in his desk. Dr. Christianson put a donut on Cynthia's desk.

Dr. Christianson then went to Joe, the next person, and asked, "Joe, do you
want a donut?"

Joe said, "Yes."

Dr. Christianson asked, "Steve would you do ten push-ups so Joe can have a
donut?"

Steve did ten push-ups, Joe got a donut. And so it went, down the first
aisle, Steve did ten push-ups for every person before they got their donut.

Walking down the second aisle, Dr. Christianson came to Scott. Scott was on
the basketball team, and in as good condition as Steve. He was very popular
and never lacking for female companionship.

When the professor asked, "Scott do you want a donut?"

Scott's reply was, "Well, can I do my own push-ups?"

Dr. Christianson said, "No, Steve has to do them."

Then Scott said, "Well, I don't want one then."

Dr. Christianson shrugged and then turned to Steve and asked, "Steve, would
you do ten push-ups so Scott can have a donut he doesn't want?"

With perfect obedience Steve started to do ten push-ups.

Scott said, "HEY! I said I didn't want one!"

Dr. Christianson said, "Look!, this is my classroom, my class, my desks, and
these are my donuts. Just leave it on the desk if you don't want it."

And he put a donut on Scott's desk.

Now by this time, Steve had begun to slow down a little. He just stayed on
the floor between sets because it took too much effort to be getting up and
down. You could start to see a little perspiration coming out around his
brow.

Dr. Christianson started down the third row. Now the students were beginning
to get a little angry.

Dr. Christianson asked Jenny, "Jenny, do you want a donut?"

Sternly, Jenny said, "No."

Then Dr. Christianson asked Steve, "Steve, would you do ten more push-ups so
Jenny can have a donut that she doesn't want?"

Steve did ten....Jenny got a donut.

By now, a growing sense of uneasiness filled the room. The students were
beginning to say, "No!" and there were all these uneaten donuts on the
desks.

Steve also had to really put forth a lot of extra effort to get these
push-ups done for each donut. There began to be a small pool of sweat on the
floor beneath his face, his arms and brow were beginning to get red because
of the physical effort involved.

Dr. Christianson asked Robert, who was the most vocal unbeliever in the
class, to watch Steve do each push up to make sure he did the full ten
push-ups in a set because he couldn't bear to watch all of Steve's work
all of those uneaten donuts. He sent Robert over to where Steve was so
Robert could count the set and watch Steve closely.

Dr Christianson started down the fourth row. During his class, however, some
students from other classes had wandered in and sat down on the steps along
the radiators that ran down the sides of the room. When the professor
realized this, he did a quick count and saw that now there were 34 students
in the room. He started to worry if Steve would be able to
make it.

Dr. Christianson went on to the next person and the next and the next.

Near the end of that row, Steve was really having a rough time. He was
taking a lot more time to complete each set.

Steve asked Dr. Christianson, "Do I have to make my nose touch on each one?"

Dr. Christianson thought for a moment, "Well, they're your pushups. You are
in charge now. You can do them any way that you want." And Dr. Christianson
went on.

A few moments later, Jason, a recent transfer student, came to the room and
was about to come in when all the students yelled in one voice,"NO!

Don't come in! Stay out!" Jason didn't know what was going on.

Steve picked up his head and said, "No, let him come."

Professor Christianson said, "You realize that if Jason comes in you will
have to do ten push-ups for him?"

Steve said, "Yes, let him come in. Give him a donut."

Dr. Christianson said, "Okay, Steve, I'll let you get Jason's out of the way
right now. Jason, do you want a donut?"


Jason, new to the room, hardly knew what was going on. "Yes," he said, give
me a donut." "Steve, will you do ten push-ups so that Jason can have a
donut?"

Steve did ten push-ups very slowly and with great effort. Jason, was handed
a donut and sat down.

Dr. Christianson finished the fourth row, and then started on those visitors
seated by the heaters. Steve's arms were now shaking with each push-up in a
struggle to lift himself against the force of gravity. By this time sweat
was profusely dropping off of his face, there was no sound except his heavy
breathing; there was not a dry eye in the room.

The very last two students in the room were two young women, both
cheerleaders, and very popular.


Dr. Christianson went to Linda, the second to last, and asked, "Linda,do you
want a donut?"

Linda said, very sadly, "No, thank you."

Professor Christianson quietly asked, "Steve, would you do ten push-ups so
that Linda can have a donut she doesn't want?"

Grunting from the effort, Steve did ten very slow push-ups for Linda.

Then Dr. Christianson turned to the last girl, Susan. "Susan, do you want a
donut?"

Susan, with tears flowing down her face, began to cry. "Dr Christianson, why
can't I help him?"

Dr. Christianson, with tears of his own, said, "No, Steve has to do it
alone; I have given him this task and he is in charge of seeing that
everyone has an opportunity for a donut whether they want it or not.
When I decided to have a party this last day of class, I looked at my grade
book.. Steve here is the only student with a perfect grade. Everyone else
has failed a test, skipped class, or offered me inferior work. Steve told
me that in football practice, when a player messes up he must do push-ups.

I told Steve that none of you could come to my party unless he paid the
price by doing your push ups. He and I made a deal for your sakes."

Steve, would you do ten push-ups so Susan can have a donut?"

As Steve very slowly finished his last push-up, with the understanding that
he had accomplished all that was required of him, having done 350
push-ups, his arms buckled beneath him and he fell to the floor.

Dr. Christianson turned to the room and said, "And so it was, that our
Savior, Jesus Christ, on the cross, plead to the Father, 'Into thy hands I
commend my spirit.' With the understanding that He had done everything that
was required of Him, He yielded up His life. And like some of those in this
room, many of us leave the gift on the desk, uneaten."

Two students helped Steve up off the floor and to a seat, physically
exhausted, but wearing a thin smile.

"Well done, good and faithful servant," said the professor, adding, "Not all
sermons are preached in words."

Turning to his class, the professor said, "My wish is that you might
understand and fully comprehend all the riches of grace and mercy that have
been given to you through the sacrifice of our Lord and Savior Jesus Christ.
He spared not His only Begotten Son, but gave Him up for us all, for the
whole Church, now and forever. Whether or not we choose to
Accept His gift to us, the price has been paid."

"Wouldn't you be foolish and ungrateful to leave it lying on the desk?"

What a crazy day!!

Today was the Staff Appreciation Luncheon at school. PTO hosted and it was yummy! Lots of wonderful desserts from Holly's Deli! Yum!

But before we could relax and enjoy the goodies, we had to sit in the hallways for what seemed like FOREVER! waiting on the tornado warning to pass. Dude, We arent in Kansas!!! We are in the mountains for heaven sakes. But all is well, we were all safe and sound. The Swannanoa Efflers are good too, as rumour was a twister touched down there as well.


Tomorrow, I have a busy day subbing in my Favorite 3rd grade class! Should be lots of fun, just hope the weather changes so they can head outside to blow off some steam!

Mother's Day, Summer Reading, etc.

So the question every father/husband is wondering right now....What does my wife want for Mother's Day?? Well flowers are nice, chocolate too fattening but yummy...So here's my list: (remember I'm a pratical kinda gal!)

1. New Baking Sheets- Nonstick kind!
2. New Brown flip flops
3. Soft summery sheets
4. A pedicure
And #5...I really really want a mom/wife devotional book.

I'm also really excited about what cute idea Bryson's teacher has done with his class. He keeps telling me what a surprise he has. I love how excited he is for me to be at the Mother Tea Party on Friday and to show me his creation.


With classes being over, the first place I hit up was the library. I love love love to read, just not for school. I'm going to put a gadget on the side here with current reads and rate them 1-5 stars.

Here is how that system will work. I dont promise they will be classic novels, as I'm more into chic-lit kinda books.

Finished for Now!

All my assignments have been turned in and most grades have been posted! I passed my math class! I was worried sick about this class, as I have really struggled. i learnt very quickly I cannot take a online math class. No way.

But anyways, its over & I get to rest and relax till May 20th. So I'm going to try to cut back on my online time for a few days as well. I spend entirely too much time on this laptop.

Project Seven

Wow! I was listening to Matt & Carol this morning. (See Carol's blog- Cantcookalick on my sidebar) and found myself being in tears. I am and was so overwhelmed with the support they are getting for Project Seven. Its amazing how wonderful people pull together for a good cause. And 106.9 is such a wonderful blessing to me. It never fails that when I'm down, one of my favorite songs will come on or a message that sends such a blessing to me.

Wild times...

So last night I was up blogging at 12:30. And tonight I'm nowhere near sleepy. This is making for a grouchy mommy! I need my sleep!

Tomorrow is a big PTO meeting. We're going to be doing some planning for next year, getting a teacher luncheon together and hopefully coming up with loads of new fun ideas. We are also planning a community service project.

Bryson had a ballgame tonight & boy they rocked! Played so well. He got two very good hits and fielded great too!

Josh is still battling this messy sinus infection. I wish it would rain just one day to help wash away some of this pollen.


I made a yummy chicken pot pie tonight & I cant wait to have leftovers tomorrow. :) hehe!

Skipping Spring..straight into Summer

The weather has been beautiful this weekend, but if its any indication of what to expect in July...its going to be HOT!!!

I have gotten so much accomplished today, but I'm bummed we missed church. Josh let me sleep in and it was sooooo nice! He is awesome!

I have a math test tomorrow, that I have to do AMAZInG on! I'm dreading it, and worried sick about it. I've did reviews for about 3 hours now.I hope it helps.

I'm going to go listen to Jerry's message from this morning and try to relax and rest good tonight & maybe I will do okay.

Speaking of accomplishing hard tasks, Congrats Tabitha on your 5k! Maybe I will get motivated now..LOL!


Friday is Kindergarten registration & I will be taking Mr Carson! I cant believe my baby is ready to be a big kindergartener. Time sure flies by.

For all you Nutella Freaks...



Like ME!!!

This sounds heavenly:

Nutella Frosted Cupcakes
1 1/2 sticks (3/4 cup, 12 oz) butter, softened
3/4 cup granulated sugar
3 large eggs
1/2 tsp vanilla extract
1 3/4 cups sifted all purpose flour
1/4 tsp salt
2 tsp baking powder
Nutella, approx. 1/3 cup

Preheat oven to 325F. Line 12 muffin tins with paper liners or grease the cups with some butter. Alternatively, butter an 8-inch round cake pan.

Cream together butter and sugar until light, 2 minutes. Add in eggs one at a time, until fully incorporated. Don’t worry if the batter doesn’t look smooth. Add vanilla. Stir in flour, salt and baking powder until batter is uniform and no flour remains.

Fill each muffin cup about 3/4 full (or pour all the batter into the cake pan). The batter will be thick. Top each cake with a dollop (I used about 2 tsp per cupcake and about 1/3 cup dolloped in tablespoon measures for the cake round) of Nutella. Swirl Nutella in with a toothpick, making sure to fold a bit of batter up over the nutella.

Bake cupcakes for about 20 minutes and the round cake for 25-30.

Remove to a wire rack to cool completely.
Makes 12 cupcakes or 1 8-inch round cake.

Cooking

So, i mentioned in my last post that last week was very stressful. I found out my hours at work had really been cut. So i'm looking for a few ways to cut back around here. Looking over our household finances, our biggest problem is eating out..of course this probably is our waistline problem as well.

So, I'm asking for some recipes to try. What is your families favorite meal? I need some new ideas to try. We get stuck in ruts and then we eat out. LOL!

I promise to try them out and even give a review of what we think! We have no food allergies,though both boys dont care for anthing with ground beef. They are so weird. LOL :)

Fun Filled Saturday

After a very stressful week, a fun filled Saturday was awesome!!

We had two ballgames, a nice lunch just me and my 3 boys, then game night and pizza at my moms. It was lots of fun. If you havent ever played Phase 10, you should! Just plan on playing for a couple of hours as the more players you have the longer the game can last.

We had a long-lost friend come join us..Mary! I love this girl..she is crazy and just fits right in with our sillyness!





Carson has his dental surgery Monday at 10:30, so if you could send some prayers our direction, it would be wonderful. He really doesnt have any clue what is going to happen, but I'm nervous of course. Antime Anesthesia is involved it makes me nervous. We have done it a few times now and i just hate it. My poor baby is always so cranky afterwards. So please remember us in prayers. Josh is going to go with us of course, so hopefully that will help Carson too.

Easter Sunday & Smells ?? LOL

Funny how I posted that video & then we sang it twice at church. I just love it!! Had a great time at church, Bryson really enjoyed childrens church as usual. We also got to see some old friends- Andrew, Nick and a few more. We even got to see Andrew's sweet parents Dean & Sharon. They are just the sweetest & I love them dearly

Then we were off to Rutherfordton. We had the best time. True southern food- Ham, Corn, Green Beans, Deviled Eggs, Rolls, Potatoes,etc. And oh my goodness the dessert!! Yum Yum. 2 different Banana Puddings, Earthquake Cake, Butterfinger Cake, Cookies..so delicious! My aunts and grandma sure can cook!! <3>

The boys had a wonderful time hiding eggs and getting spoiled. Bryson and my uncle spent some time throwing a baseball around as well.


Josh and my uncles and cousin pulled my grandfathers old four-wheeler out of the building and worked on it. It hasnt ran well in quite a while & they all want to use it for hunting this year and so they decided to mess with it. To make a long story short, Josh wound up bringing it home to work on. That thing brings back memories of my grandfather everytime I look at it. I can just see him riding down the hill behind my grandparents house and to his garden to gather the harvest. I can remember riding on the back with him. I can remember how I thought it stunk of oil, gas and exhaust and how the smell would stick to my clothes. At the time i hated it. Today- i stood on the deck and breathed it all in. Silly, I know.


Isnt it funny how smells can take you back someplace??

Today is Easter!!

I'm up early waiting on the boys to wake up and find their Easter baskets. Bryson has been wanting a "real" Bible. So off mom& I went to try to find one that wasnt a story book but written a bit easier for a 6 year old to read. Wasnt an eas task I tell you, but we did! I stuck it in his basket, so i cant wait to see if he gets excited.

One thing they arent going to like is the lack of candy, but oh well! With Carson's dental problem we just had, I'm not buying much candy around here anymore.

Well tomorrow is Back at School! i'm dreading it! But summer will be here quickly, I hope.

But for today, i'm going to enjoy it. We are heading to Rutherfordton after church to spend time with my favorite part of my family. I love my grandmother to death- she is the best thing in the world. She is so sweet and I just can talk to her about anything! Also will see my moms two brothers and all their families. I love this side of the family, the are so relaxed and laid back and we alwas have such a great time with them all. They adore my kids and spoil them rotten as well. I'm sure Carson will put on a show, he loves to entertain and make people laugh. :)

Well, I better get off and get busy..ironing, making banana pudding and all that fun stuff!

Spring Break

and its blowing snow.. Whats up with that? I'm not happy!

We went to the lake Sunday and I relaxed with a good book and B and hubby fished. Only caught one all day and so they werent happy. I came home looking like a lobster! That may be the only sun I get all Spring break, the way its looking.

What about those Heels?? Awesome arent they! I'm so glad to be a Tarheel!! <3


I decided since its a yucky day to pull the WiFit out. I have used it in 54 days. GASP! I also had gained 2.2 pounds. Yuck yuckyuck! So tomorrow starts a new healthy eating regime. ( I'm saying that instead of DIET). Not starting today, because I invited the inlaws over for dinner tonight and I'm sure I will stuff my face. :(

Hubby has a fire dept meeting tonight after dinner and I'm going to try to do some major homework. I'm almost finished with a few of my classes and they dont officially end till May! I'm proud of myself!

God is Good and he continues to bless our family daily!

God is Good!!

Many times, we are quick to think of things we need and/or want and not be thankful for the things God has given us. I'm thankful for so many things right now & Just wanted to post some. Some are little, some are huge.

First and foremost I'm thankful for the Awesome God we serve! Without him we would be nothing. I'm thankful for the opportunity to talk to him anytime I need. Prayer is such a wonderful thing.

Im thankful for an amazing husband. He is m best friend and the best daddy. I dont want to think where i'd be without him. I adore him!

Two wonderful children, they are the sunshine in my life. I love these two more than I ever thought I could love anyone. They are amazing and def a gift and a blessing.

An amazing family and inlaws. I couldnt ask for more! I have a wonderful mother who is always there for me and an awesome sister!

There is more, but one of my cranky blessings need me :) He is so cranky from the medicine the dentist gave him yesterday. Poor babe.

Counting down till Spring Break!

The Variety Show was such a hit! We raised quite a bit of money and had a blast doing it. The Bandstand theme was quite cute and all the teachers put on quite a show! It was well worth the work!

The "theme" for this week seems to be doctors appointments. Carson has a dentist and eye doctor this week. My throat is very scratchy &I'm just hoping to doctor it myself for now.

I dont think I've blogged about it, but we are trying a new church & so far, We LOVE IT! The boys, Josh and I all do. So hopefully this is where we are meant to be. The preacher is wonderful as are the youth & childrens pastors. We really like the people- though we dont know 1/6th of them. LOL!



Friday starts Spring Break & I'm so ready for it. Don't really have much planned but ready to sleep late and catch up on some rest. I just hope the weather will be pretty. Its been rainy and dreary and so yucky. Im ready for warm days and sunshine!

Bryson has his very first baseball game for this year Tonight! I hope he does well. Well, Carson- we wont talk about his baseball experience right now. He's a hoot and just not into it right now. He'd rather blow kisses to mommy or play in the dirt. Its actually quite comical!

Lots going on this week!

The PTO president hat is cleaned and ready to go full blast this week!

Tomorrow, lots of hitting thrift stores looking for some costumes!

Tuesday, we have an Explorer Dome from Kidsenses visiting the upper grades and of course I will have to be on hand for that.

Wednesday, we will be decorating for our Variety Show. The teachers have lots of fun acts planned and lots of silliness and laughs! The theme is PG Bandstand, and I've been busy cutting out letters, looking for costumes, and making records to decorate with all weekend. This afternoon will also be dress rehersal as well!!

Thursday, will be shopping for the drinks and other foods we will need the night of.

Friday, SHOW time!!!! Curtains open at 7:00 and the rest of the day I will be running around with my head cut of, I'm sure!

Negatitivity

It feels so good to get the negativity out of your life. Have you ever had a certain person that no matter what never had anything good to say, never anything positive? All they wanted to do was talk about others and gossip? It was always all about them and what they had,were doing and never cared on how it hurt anyone else..but they were always going to get what the wanted.

I had one in my life and finally enough was enough and I have pulled all forms of contact from them. The probably havent even realized it yet, but I feel like I have had ten tons lifted off of me. I will still pray for them every night and I hope one day the relationship can change, but for now I need to do this.

What a beautiful weekend!!

We've gotten quite a bit accomplished this weekend. Got the boys some tee ball & baseball gear. That starts this week. Practice on Mondays & Wednesdays for now, may go to another night as well. WHew! Hubby has fire class on Mondays and Thursdays so I will be solo a few nights.

I wish this beautiful weather would go ahead and stay for a while!I'm loving it!It makes me want to go start digging in the ground planting some flowers and laying by the pool!

Louder than Words

So as I've said on here plenty of times, I have a true passion to work with Special Needs children.



So while browsing the county library I see two books that just jump right out at me.



Jenny McCarthy's Louder than Words and the sequel..Mother Warriors..both are about her son that has Autism.



I know you are all thinking, A Jenny book? What? The playboy model, crazy blonde? She wrote a good book?



They both are amazing!!



For real, i had laughed, I have cried, i've been mad along with her. Its an amazing story and I admire all the moms out there with Special Needs children.



I have a wonderful bestest friend whose son has Down Syndrome and everyday holds new and more difficult struggles for them. Everyday is a new battle, some battles will never be won and more are only just beginning. But one thing is for sure, these children are wonderful. They are God's gifts to us. They are the brightest eyed and biggest smiles you will ever see. They can melt the toughest mans heart with just a little smile.



I admire Jenny for writing this story of her son and her life, it may not be pretty at times, it may be hard to stomach..but this is what so many moms and dads are going through on a daily basis. Something should be done..Why is it so hard for these children to get the access to the help they need?? So many of these parents dont know who or where to turn to!



Like Jenny stated, the pediatrician or the neurologists dont say, "Maam, your son has autism, or celebral palsy, or downs...I'm sorry. Now, here is your map. You are here, you need to be here". Noone does this.. You are left on your own. To hope you connect with someone that lives a like sorta like yours. To hope they have any experience.



This is why I have such a strong passion to work with Special Needs. They need an advocate. They need someone for the parents. I pray daily that something will be done to help these parents find a way to help their beautiful children.

Tuesday..

Well this morning was a 2-hour delay! Whoop! Had a pretty little bit of snow fall yesterday & we got a much needed long weekend! But this morning brought Little C having a stomach bug. It seems so far that he's the only one.

I've been branching out on my blogs I have been following and reading and found a few local women with some wonderful blogs about their faith and their journeys with God. I find it so uplifting. I just wish we could all find more time to blog. Its a great stress relief and a way to keep others in touch with us. (speaking of which, I'm debating debuting my blog to some *gasp* family members). I really don't have anything super personal on here yet and so I think they might enjoying reading. Who knows.



I ran across my favorite most Bible verse the other day & it has been engraved in my mind ever since:




Philippians 2:13 “For God is working in you, giving you the desire to obey him and the power to do what pleases him.”
This verse really hits home to me. For so long, like 5 years now, i had no clue where I was supposed to be, what i was supposed to be doing and didn't know how to go about finding it. One day I was offered a wonderful, soon to be life changing job. I was asked to be the media center assistant at the elementary school my kids attend. I thought, shoot, anyone can shelve some books. Sounds like easy money to me & working around my kids schedule! Awesome! Right on!
Little did i know, I was going to fall in love with those little kids. They are so wonderful.
Well, my position ended with summer and I wasn't eligible due to lack of schooling to be re-hired. One of those quirky school system things. (Who knows) . But our principal found me something, but not before lots of stressing, praying, wondering and more stress!! She also encouraged me to pursue school. What?? This mom of two doesn't have time, much less trying to make a smidgen of money and take care of an awesome husband and house. No way! Well little did I know the perfect school for me landed in my lap. I had searched and searched for a school to do from home that was legitimate and accommodating to my schedule. I was ready to give up and out of the blue I was told to look at one. This was a Friday afternoon and classes started the following Tuesday. Girl, you better get your act together and hurry! Just when i was ready to lose faith, God put me where I was supposed to be! And I've never been happier.
Sure, school stresses me some and is very time consuming, but it will be well worth it in the end. He WILL put us where he wants us to be. We work for HIM and he has a plan for US!

Cleaning out..

Spring cleaning must be hitting early! Or maybe its just the fact I have lost a smidge of weight?? Either way, I like it!

I'm home today with the littlest boy. He has a stomach bug I guess. But right now he is laying on my couch watching some cartoons and sipping gatorade. His request. Poor sweetie.

So i'm cleaning out my closet. My biggest problem is what do I do with all these clothes I cant wear? Ebay? Is the shipping worth it? our local consignment shops arent taking anything at the moment. I really dont want to fool with a yard sale to only get 50cents a pair of jeans.

Couples..

So someone feel me in on the ettiquette for being friends with another couple. J's best friend was dating this girl who quickly became a good friend of mine. Well this weekend some stuff happened and they broke it off. How do we all stay friends? It's already gotten difficult and I really dont want to be in the middle, but I'd like to stay friends with all the parties. I'm just confused on how to make it work.

Lay low for a while till the storm blows over??

traffic,faith,life..

Everyday something comes to mind and I think I should blog about it..and then...I forget. Sorry this place has been so boring lately, but I've been doing lots of reading and less blogging.

I did get myself a little present...A PINK Blackberry Pearl! I just downloaded mobile blogging and hopefully that will get me more motivated.

Other things going on in the "E" household, Hubby became a firefighter recently!, He does look awful cute in his turn out gear..LOL!! One of my classes ends next week & i'm so thankful. It's been a very thought prevoking class but the projects are crucial. So time consuming. As a matter of fact, I should be working on my last one now.

My boys are as wonderful as ever. They continue to amaze me and i just love them to pieces. I am such a blessed person & never knew boys could be so much fun!


Yesterday we hopped in the car and spontaneously took off for my old stomping grounds- Rutherfordton. Saw some family we havent seen since Christmas and just had a good time visiting. It was nice, but it makes me realize how much I miss living there. I wish the economy was better there and we would move there. Much to the inlaws and my parents disappointment, it just feels more like "home" than it does here.

Speaking of the Economy, does anyone else get worried and depressed hearing about it? I try not to, but its not easy. God will take care of us and he will provide, we just have to trust in him. Its just the unknown that makes me uneasy. I've seen many people lately who thought their jobs were safe and then the next day they are un-employed. Its quite sad.

I've got some more posts brewing in my mind..hopefully I will get them typed shortly.
